How do you make sure that you are eating fresh fish and other seafood? There are certain tips to ensure this. If you are buying whole fish, opt for those that have bright and clear eyes. The skin should be shiny, clean and metallic in colour. Plus, it has to smell like seawater. If the scent is foul, this means that it is stale. Lastly, look for rich red gills instead of faded brick red; which is common in addled fish.
When you are shopping for fillet, choose those that have vibrant flesh. Make sure the remaining skin is pristine and still glossy. On the other hand, the aroma should not be pungent. Look out for milky liquid coming out from the meat. This is a sign that it is starting to rot. You can press the fish with your fingers to check for resiliency. If you leave marks, this means that the food is not fresh.
If you want to buy live lobster or crab, go for those that are scampering around. Do not pick out the ones that are hanging motionless or staying still in the corner. The best idea is to befriend the seller and ask for new shipments. This way, you can always shop for fresh orders.
